Looking for a delicious and healthy treat that you can whip up in no time? These chocolate coconut balls are the perfect snack, and they’re packed with natural sweetness and flavor. Made with simple ingredients like dates, cashews, coconut, and a bit of dark chocolate, they are vegan, gluten-free, and oh-so-tasty!

Ingredients:
100g dates
75g cashews
1 tablespoon coconut oil
1 tablespoon cocoa powder
30g dark chocolate
3 tablespoons shredded coconut
Instructions:
Prep the Dates: If your dates are a bit dry, soak them in hot water for 5-10 minutes to soften them up. Drain well before using.
Blend the Ingredients: Add the soaked dates, cashews, coconut oil, cocoa powder, and dark chocolate to a food processor. Pulse a few times until everything is blended into a coarse paste. You want the mixture to be sticky enough to form into balls but still a bit chunky!
Shape the Balls: Roll the mixture into approximately 16 bite-sized balls.
Coat with Coconut: Place the shredded coconut in a small dish. Roll each ball in the coconut until it's fully coated. This step adds a delicious texture and extra coconut flavor!
Chill: Pop the balls in the fridge for about 30 minutes to firm up.
